Swedish Sour Cream and Caviar Sauce for Salmon

“A terrific, creamy sauce to serve with grilled salmon, steamed artichokes, and boiled new potatoes in the summertime. Wonderful with salmon, it’s also great with other more mild fish dishes.”
1 cup sour cream
1 (8 ounce) container creme
1/2 cup mayonnaise
4 tablespoons chopped fresh
1 pinch white pepper
3 1/2 ounces red lumpfish
1. In a bowl, stir together sour cream, creme fraiche, mayonnaise, dill, and white pepper. Carefully mix in caviar. Cover, and refrigerate at least 1 hour before serving.

Smoked Salmon Vodka Cream Sauce

“Create a very special dinner for two with smoked salmon sauteed in butter and onion, simmered in vodka, then finished with a cream and tomato sauce flavored with fresh nutmeg and flakes of hot pepper. Serve over pasta, by candlelight of course.”
1 tablespoon butter
1 tablespoon finely diced onion
1/2 cup diced smoked salmon
2 fluid ounces vodka
1/4 cup heavy whipping cream
1/4 cup chopped tomatoes
1/2 cup tomato sauce
salt to taste
ground black pepper to taste
1 pinch ground nutmeg
1/8 tablespoon cayenne pepper
1. In a large saucepan saute butter and onion with smoked salmon. Once the pan begins to lightly smoke, pull saucepan away from heat source and add the Vodka.
2. When the Vodka has burned off, return the sauce to heat source and mix in the tomatoes, tomato sauce and heavy cream.
3. Season sauce with salt, pepper, nutmeg, and chile pepper. Reduce sauce to desired consistency; serve.

“Salmon brine is made with lots of citrus flavor. It is also excellent for trout. This recipe makes enough to brine two large salmon fillets.”
1 gallon water
1 cup kosher salt
1 cup white sugar
1 cup brown sugar
lemon pepper to taste
1 (3 ounce) package dry crab
and shrimp seasoning mix
freshly ground black pepper to
4 cloves garlic, crushed or to
1 dash hot pepper sauce
4 lemons, sliced and crushed
2 oranges, sliced and crushed
1 lime, sliced and crushed
1 large yellow onion, sliced
1. Pour the water into a large bowl or small bucket. If you must use a pot, use one that does not contain aluminum. Stir in the kosher salt, white sugar, brown sugar, lemon pepper, parsley and seasoning mix. Add the garlic, hot pepper sauce, lemons, oranges, lime and onion. Soak your salmon in this brine for 12 to 36 hours. Smoke using your desired method.
